Garlic Roasted Brussel Sprouts are quick to make and a delicious veggie option.

Brussel sprouts are small but pack a nutrient punch!

They are full of vitamins, minerals, and help to support your immune system. With this time of year, having a strong immune system will keep you fit and healthy. I used to hate brussel sprouts until I had them roasted. Total game changer. Before, they were always way too soft and mushy (which BTW, I can’t stand overcooked veggies).

It wasn’t until my boyfriend and I went vegan and gluten free (it was his idea, he lasted a year, I lasted the summer but had meat almost every Friday during that time) when I was in grad school. We lived apart during this time. I came home for the summer to do my internship, and he had already started. Being the awesome person that I am, I joined because why not have some accountability? As soon as I went back to school, I stopped lol. If anything, I learned how to roast veggies like a boss and came up with some simple ways to get protein without eating meat. It was a great learning experience.

These tiny cabbages are my second favorite veggie.

Roasting them is the best way to eat them in my opinion. When roasted, they have the power to change a veggie hater into a veggie lover.

Garlic Roasted Brussel Sprouts

 

Here’s a quick and simple recipe to start adding these in to your eating plan.

Garlic Roasted Brussel Sprouts

Garlic Roasted Brussel Sprouts are quick to make and a delicious veggie option that pack a nutrient punch.
Ingredients
  • 1/2 lb brussel sprouts, fresh not frozen for roasting purposes
  • 1 tablespoon garlic power
  • 1 tablespoon onion power
  • 1 tablespoon black pepper
  • 1/2 tablespoon salt
  • 1 1/2 tablespoon olive oil
Instructions
  1. Set the oven to 400°F.
  2. Cover a baking sheet with aluminum foil or parchment paper.
  3. Wash, dry, and cut brussel sprouts in half.
  4. In a medium bowl, mix all the seasonings and olive oil together.
  5. Add the halves of brussels to the bowl and toss.
  6. Place coated brussels on the baking sheet being careful not to have them sit on top of each other.
  7. Bake for 15 minutes or until they start brown and get crunchy.
  8. Remove from oven, and eat them!

    I am bookmarking this! I like Brussels Sprouts but my husband LOVES them! I think this recipe has his name written all over it!
