From the moment I first heard about overnight oats, I was hooked.

I love oatmeal. Growing up, our Dad got to have oatmeal for breakfast. But not the rest of us, which was weird. He’s favorite was the Quaker apple cinnamon sugar one. It always smelt so good in the morning. Sometimes we got to have some too which really made my day. If we had plain oatmeal, I would cover the top with brown sugar because I loved to watch it melt. Then I’d add just a little bit of milk because I don’t like runny oatmeal.

Oatmeal has been a staple since college. From granola to oatmeal to gluten free oats during my gluten free days (because I thought it’d make my stomach flat).

Overnight oats have changed the game for me. Very rarely during the week do I have time to eat at home. So I usually take something with me to eat when I get to work. There’s no really safe way to eat oatmeal in the car while driving, and that makes it too hard to pay attention to my intake. But with overnight oats, I can carry them with me in my lunch bag and then eat them. You don’t have to warm them up which makes it even easier. I warmed mine up one time and thought it was disgusting. It’s not quite the same as traditional oatmeal.

Take 5 minutes tonight and set yourself up for a great start to the day tomorrow. For this one, all you need is oatmeal, milk, plain Greek yogurt, honey, cinnamon, mango, and coconut. You’ll get a serving of smart carbs, protein, and healthy fats (from the coconut) which is a great combo. A nourished body is a happy and productive body.

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup milk
  • 1/2 cup plain Greek yogurt
  • 1 tbs raw honey
  • 1/4 cup chopped mango fresh or frozen
  • 1 tbs shredded coconut
  • Dash of cinnamon
  • Optional: 1 tbs flax seeds
Instructions
  1. In a container or mason jar (because it looks cool), mix together your oats, milk, yogurt, cinnamon and honey.
  2. Cover and place in the fridge overnight.
  3. In the morning, top with mango and coconut.
  4. Mix and eat.
