Protein Banana Bread Muffins

Give these protein packed banana oatmeal muffins a go when you’re on the go.

These can be really great for breakfast or as a post workout snack. With the smart carbs (oatmeal and bananas) being the main ingredients, this does make for an optimal post workout snack. However, if you’re just getting into the habit of eating breakfast and eating more whole grains, then don’t worry about when you eat these. Just eat them because they’re delicious and a great source of fiber.

I like to make these to have on hand during my busy weeks. I eat them more often for breakfast as I’m running out the door versus after a workout. My boyfriend is better at taking his time to eat breakfast before leaving the house, so he’ll warm them up and add some honey and butter on top. #jealous.

Protein Packed Banana Oatmeal Muffins

These protein packed banana oatmeal muffins not only get you your serving of protein but are also chock full of fiber!
Ingredients
  • 2 large ripe bananas
  • 2 eggs
  • 1 cup plain fat free Greek yogurt (I used Chobani, I also really like Fage)
  • 1/3 raw local (if possible) honey, use 1/2 cup if you like it a little sweeter
  • 1.5 tsp vanilla extract
  • 2.5 cups quick oats (I used Bob Mills)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 2 scoops protein powder (I used BioChem Vanilla)
  • Cinnamon, ground cloves, and nutmeg to taste
Instructions
  1. Combine all wet ingredients in a blender or food processor (I used my Ninja blender food processor).
  2. Add all dry ingredients and mix.
  3. Pour evenly into muffin tin.
  4. Bake for 20 minutes or until the toothpick comes out clean.
  5. Let cool on the cooling rack
  6. Enjoy with a little honey and butter on top!

      Awesome and thank you! I love oatmeal. I use them in overnight oats too that I can quickly grab when I’m heading out the door.
