Protein no bake energy bites are all the craze right now. You can make them so many different ways and enjoy a variety of them for months at a time. Eating on the go can making healthy eating a real challenge. There is finally starting to be more healthful options at fast food restaurants and in convenience stores. But packing your own goods when you can gives you even more control of what you’re eating. Making a batch of these protein, pumpkin no bake energy bites will help you do just that. It’s pumpkin season so, here’s yet another way to put that pumpkin to use. With these energy bites, you get all the health benefits of pumpkin as well as protein from the vanilla protein powder, healthy fats from the chia seeds and sunflower butter, and smart carbs from the oats.

How to make no bake energy bites

Making these pumpkin energy bites is easy and takes very little of your time. It’ll take you about 15 minutes to get all the ingredients together and then the other 30 minutes is your fridge at work. During that 30 minutes, you can fit in a quick HIIT workout, or your can prep some other food for meals for the week.

For these pumpkin no bake energy bites, you’ll need:

Pumpkin puree – not pumpkin pie mix

Oatmeal

Chia seeds

Dark chocolate chips

Protein powder

Pumpkin spice

Here’s how to make your own pumpkin spice. Grab about 1 teaspoon cinnamon and 1/2 teaspoon of the following: ground ginger, ground allspice, ground clove, and ground nutmeg. You now have everything you need to make a pumpkin spice latte at home!

Grab a cooking sheet and line it with foil or parchment paper. The recipe is below, but essentially, you’re going to mix off of these ingredients together. Then create 12 balls with your hands. Put them in the fridge for 30 minutes so they set. The key is the consistency of the mixture. It should still be sticky and easy to mold. If it’s watery, add more oatmeal. These should be easy to roll and keep their shape before going in the fridge.

Ingredients
  • 1/2 cup pumpkin puree
  • 2 tbs sun butter or nut butter of your choice
  • 1 cup quick rolling oats
  • 1/2 cup dark chocolate chips
  • 1/8 cup chia seeds
  • 1/8 cup raw honey
  • 1/4 cup vanilla protein powder
  • 1 tsp vanilla extract
  • Pumpkin spice:
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
Instructions
  1. Add all ingredients in a medium bowl and mix together.
  2. Grab about a heaping spoonful of mixture and roll it into in your hands.
  3. Place on a lined baking sheet so that clean up is easier.
  4. Place energy bites in the fridge for 30 minutes.
  5. Eat them up!
  6. Store the remainder in an airtight container in the fridge.
