Quick and easy one pan beef kabobs is a quick and efficient (some may say lazy) way to get that feeling like you’re eating kabobs without the work of putting them on the stick and then taking them off the stick again.

When I first planned on making this recipe, I was going to go all out.

I had the skewers at home and was ready to roll. Until I wasn’t. I started thinking, who really makes these kabobs just for themselves? That’s a lot of work. So of course, that one pan dinner life came to the rescue. And they’re just as delicious with less work.

Beef kabobs make me think of summer and grilling in the backyard. Except that I don’t have a grill, so some of the appeal is lost. Ryan and I were thinking about getting a grill this summer. But our past track record of having a grill and not using it made us realize we should spend that money elsewhere like updating our landscape so our neighbors don’t hate us.

These quick and easy one pan beef kabobs dinner will change your life and make you look like you have amazing cooking skills.

What I love about one pan dinners is that for 15-20 minutes you can be doing something else while your dinner cooks. It almost feels like someone else is cooking for you, almost. You can take a power nap, stretch, tidy up the house a bit, read, or literally sit and do nothing. It’s your choice what you do with that bit of time you just bought back.

Ingredients
  • 1 lb stew beef chopped. I bought my chopped because I don’t like cutting raw meat.
  • 2 green bell peppers chopped
  • 1/2 red onion chopped
  • Sauce:
  • 6 oz reduced sodium beef, chicken, or veggie broth
  • 1/4 cup reduced soy sauce
  • 3 tablespoons honey
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbs onion powder
  • 1 tbs garlic powder
  • 1 tbs parsley
Instructions
  1. Preheat oven to 400°F.
  2. Line a baking sheet with foil.
  3. Mix the sauce together in a large bowl. Add the beef to it, and let it marinade while you chop dem veggies.
  4. Chop the pepper and onions.
  5. Place the vegges on the baking sheet.
  6. Add the beef. Then pour the sauce over everything.
  7. Bake for 15 minutes. Pour a glass of wine or do some stretching while it bakes. This ones too fast for a LUCC workout.
  8. Serve it up on its own or on a bed of brown rice/quinoa.
