Weekly Meal Plan #12: Protein Muffins is 5 protein packed muffins to make and take with you throughout the week. As you know, I always focus on making sure protein is in every meal, including breakfast and snacks.
Muffins are delicious, but protein muffins are even more delicious!
I love a blueberry muffin or a poppyseed one. But the typical muffin just doesn’t have enough protein in it to keep us feeling full until our next meal. This might explain why after eating one with coffee, you’re starving a couple hours later.
Protein helps keep us full and is essential for body functions. So why not have the best of both worlds with protein muffins. These can be eaten for breakfast and are great for a post workout snack.

Pumpkin Chocolate Chip Protein Muffins by eat the grains
While it’s not fall, it doesn’t mean you can’t have pumpkin. I like this one because of the combo of pumpkin, protein powder, and Greek yogurt to give us lots of protein in our muffin. This one is also quick and easy to make. You can do a LUCC workout while you’re baking these.
Double Chocolate Protein Muffins by design eat repeat
Yum, chocolate! This protein muffin is packed with protein and would make for a great post workout snack or a treat to enjoy. I bet these would be so delicious warmed up with a glass of milk (of your choice).
Protein Packed Banana Oatmeal Muffins by Yours Truly
This one is quick and easy to make, Grab those ripe bananas, some Greek yogurt and protein powder. With the oats and bananas, you also get a good amount of fiber. The boyfriend and I ate these for breakfast for the week.
Power Muffins by See Aimee Cook
I love blueberry muffins. This one is more on the sweet side, but the Greek yogurt helps to keep your body from digesting all the sugar quickly. I feel this is the best of both worlds for me. I’d eat this one more as a treat than a breakfast.
Carrot Cake Protein Muffins by Amy’s Healthy Baking
This one calls for more specialty ingredients but is a great idea the next time your make carrot cake. I love carrot cake but have to make my own when I have it because I’m allergic to nuts. Maybe I’ll make a recipe for you all.
