Chipotle Chicken bowl is a quick and delicious meal to add to your meal prep for the week. Eat them for lunches or have them for dinners. Either way they won’t disappoint.

Spicy chipotle chicken bowls have great flavor.

You get a serving of protein, veggies, smart carbs, and healthy fats. Plus it’s done in 30 minutes. I like this one for those reasons but also because it helps to satisfy my Chipotle cravings in a more appropriate portion size.

Why each ingredient?

Chicken: chicken is a great source of lean protein. It’s also easy to make. I’ve always enjoyed chicken. There’s a picture of me as a toddler with a drumstick in my hand lol.

Black beans: black beans are another great source of protein. If you don’t eat meat, you can add some extra beans to your bowl.

Brown rice: brown rice is a great smart carb and helps you stay full for longer. You can get creative here and use quinoa or other whole grains.

Power greens: power greens are a great veggie option. I get the prewashed ones for efficiency sake to help me save time. Sometimes I get bored with just spinach or kale so I like a mixed variety for my leafy greens. Dark leafy greens are also a good source of calcium.

Tomatoes: I used to love tomatoes as a young kid. Then my oldest sister convinced me they were gross. So I stopped eating them until I was in my late teens (thanks to the boyfriend). Now I eat them all the time. Another great veggie option.

Spicy Chipotle Chicken bowl is a quick and delicious meal to add to your meal prep for the week. Eat it for lunches or have them for dinners. Either way they won’t disappoint.
Ingredients
  • 1 tbs olive oil (not extra virgin)
  • 1 lb chicken chopped
  • 1 can low sodium black beans rinse and drained
  • 1 tomato chopped
  • 3 handfuls power greens, kale, or spinach
  • 2 cups brown rice uncooked
  • 2.5 cups water
  • Juice of one lime
  • Chopped fresh cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp chipotle powder
  • 1 tsp onion powder
  • 1 tsp garlic
  • 1/2 tsp cayenne (if you like the spice)
  • Salt and pepper to taste
  • Optional:
  • Sour cream
  • Shredded cheese
Instructions
  1. In an Instant Pot put the 2 cups of uncooked rice and 2.5 cups of water. Use the manual setting and set the timer for 22 minutes. If you don’t have an Instant Pot (get one lol) or cook your rice over the stove top.
  2. Heat the olive oil in a large sauce pan. When oil is warm, add the chicken. Cook 7-10 minutes or until chicken is cooked through. Remove for heat and place in a large bowl.
  3. Add the cumin, chili powder, chipotle powder, onion powder, garlic powder, cayenne, and salt & pepper to the chicken. Toss until well mixed together. Set aside.
  4. Once rice is done, add the lime juice, chopped cilantro, and salt & pepper to the rice.
  5. To make the bowls:
  6. Place about 1 cupped hand of rice on bottom the of the bowl.
  7. Add about 1 palm of your hand of the chipotle chicken on top of the rice.
  8. Add 1/3 of the chopped tomatoes.
  9. Then add about 1/3 of the black beans.
  10. Finally add 1 handful of greens.
  11. Top with sour cream and cheese. Mix together and eat!
