This week in Salt Lake, we went back to winter.

After weeks of spring like weather, it started snowing again. And with that, it meant more soups and comfort foods for me. It looks like it might start warming up again this week, but if you’re somewhere where it’s still winter, here are a some delicious soup options to keep you warm at night.

Soups are great because we generally make a large serving at once. This leaves options for meals the rest of the week, either lunches or dinners. Plus, you can always freezes soups and eat them later. It’s a nice touch when you’re sick of eating the same thing after a couple of days.

30 Minute Garden Veggie Barley Soup by Stacey Homemaker

This is a quick and hearty soup that will leave you feeling nice and comforted after. With all the veggies, you’ll certainly get your serving of veggies at your meal. With the addition of barley (which isn’t gluten free), you’ll get a serving of smart carbs. Eat the extras for lunch the next day or freeze them for one of the upcoming cold spring days.

Easy Whole30 Taco Soup by The Movement Menu

While I’m not a big fan for the concept of Whole30 (read: how is something that lasts 30 days sustainable?), they do have some great recipes. I can certainly appreciate the focus on whole foods, protein, and veggies. I like this recipe for those reasons and because it’s quick. If you aren’t following Whole30, feel free to sub out some of the special ingredients (ghee and coconut oil) for what you have on hand.

With all the veggies, it hard to go wrong with this one. Plus there’s bacon so it’s an automatic in my book. I love the thickness and heartiness of this soup while getting lots of health benefits from the main ingredients.

I might be a little biased on this one, but it’s seriously delicious. The seasonings are really what make this one. And of course the focus on protein and veggies because that’s how we roll over here!

20 Minute Chicken Enchilada Soup by Crunchy, Creamy, Sweet

Eating well doesn’t have to be perfect and boring. This recipe is an example of that. I love enchiladas in general and was sold on the soup form of it. Lots of protein between the chicken and the beans to make this one a very filling meal option.
