20 Minute Extra Veggie Chicken Stir Fry is a quick and delicious meal that’s done and on the table fast. Full of protein and veggies, this stir fry is a great option for living the FitLife.
I coined myself the stir fry queen because I eat a stir fry at least twice a week.
Stir fry meals are so easy and quick to make. That’s why I love them. Plus, you can switch up the protein, veggies, and sauces to make it something different each time.
As we all know, when living the FitLife, we got to get our protein and veggies. Top this one over some brown rice or quinoa and we’ve got ourselves a quick and complete meal.
Extra veggies for dinner!
To save some time on this one, I opted for a fresh stir fry mix from the grocery store. They have lots of different options. However, if you have the time, make your own stir fry mix. Some veggies you can use are broccoli, snow peas, mushrooms, peppers, onions, and asparagus to name just a few.
I also used chicken broth instead of soy sauce but you can certainly switch it up and use soy sauce.
- 2 tablespoon olive oil
- 1 lb cubed chicken
- 1 lb fresh veggie stir fry mix
- 4 tablespoons low sodium chicken broth
- Salt, pepper, garlic and onion powder to taste
- Heat 1 tablespoon olive oil over medium heat in a large cooking pan.
- Add the chicken, season it with salt, pepper, garlic and onion powder, and cook through.
- Remove the chicken from the pan.
- Add the other tablespoon of olive oil.
- Place the veggies in the pan and heat until cooked bu still crunchy.
- Then add the 4 tablespoons chicken broth.
- Mix.
- Add the chicken back in.
- Season to taste.
- Eat on it’s own or over brown rice.
