Quick, Healthy, and Delicious Red Beans and Rice

This quick, healthy, and delicious red beans and rice recipe is a health-ified version of a classic dish. You still get so much amazing flavor while supporting your fitness goals.

As you know already, I love food. I also happen to really enjoy me some red beans and rice.

Quick and Healthy Red Beans and Rice

There’s a restaurant and bar in Salt Lake City called The Bayou that has amazing red beans and rice. They don’t skimp on anything there, and it’s incredible. When Ryan and I go there, we fight over who gets the red beans and rice and who gets the jambalaya. See we try to not other the same thing, but we also don’t share with each other. We don’t share food. So I don’t know why we both can’t order the red beans and rice at the same time.

This recipe gives you all the goods you need for a well portioned meal. It is lacking a bit on the veggies, but you still get some.

Chicken is a great source of lean protein and chicken sausage is a leaner protein source compared to regular sausage.

Beans are also a source of protein and give you some much needed fiber to get things flowing.

Brown rice is one of my favorite smart carbs. And when you cook it in the Instant Pot, it takes a lot less time.

Diced tomatoes and green chilis give you those veggies.

The seasonings really make this one. I provided you the seasonings I used. In recipes I find I never use the exact amount of seasonings they recommend. It’s never enough for me. So season to taste, and add some of your other favorite seasonings to the mix. This is your food, I’m just hear to guide you and give you ideas. 🙂

Healthy and delicious red beans and rice

Quick, Healthy, and Delicious Red Beans and Rice

A health-ified version of a classic dish.
Ingredients
  • 2 cups uncooked rice
  • 2.5 cups water
  • 1 tbs olive oil
  • 1 lbs hot Italian chicken sausage
  • 1 14.5oz can diced tomatoes
  • 2 15 oz cans dark red kidney beans
  • 1 4oz can diced green chili
  • Seasons for taste: salt, black pepper, onion and garlic powder, oregano, paprika
Instructions
  1. Cook rice in your Instant Pot or on the stove or in your rice maker. Then get an Instant Pot.
  2. While the rice is cooking, heat up the olive oil over medium heat.
  3. Once hot, add and cook the chicken sausage.
  4. When the chicken is cooked, remove any excess oil.
  5. Add the diced tomatoes, beans, green chili, and broth. Stir together, and let it get hot.
  6. When the rice is done, add it in and season to taste.
  7. That’s all she wrote. Eat up, you must be hungry.
