Avocado Chicken Salad with Greek Yogurt is a flavorful mix of sweet and savory to bring you a highly protein-packed meal.

When I was younger I had a friend that would always have chicken salad for lunch.

Luckily, she was nice enough to share because it was seriously delicious. My lunches usually consisted of Lunchables that we would beg our mom for or just simple sandwiches. Sometimes we’d get lunch at school, other times it was ramen. Nothing too fancy. But also because we were in charge of making our own lunches. Which I feel was a blessing in disguise as I’m an expert lunch packer now.

As a kid, we used to make tuna salad a lot. Sticking to the basics, or maybe we were purists, tuna and mayo. Also delicious, no complaints. While I’m still a creature of habit and like things done the same way over and over, I can appreciate adding new things to some old classics.

A few years back, Ryan and I did a multitude of eating styles. We were (he was) vegan for about a year (I was vegan for the summer I was home for grad school), we did the autoimmune protocol for the 30 longest days of our lives, but one thing Ryan tried was a clean eating program. They had some seriously delicious recipes and one of them was avocado deviled eggs. Since my love for avocados is strong (and my desire to not be a proper adult is too), I found it fitting to add it to a classic such as chicken salad.

The combination of the ingredients in this recipe are delicious but also highly nutritious. To save myself sometime, I got a plain rotisserie chicken from the grocery store. I’ll actually do this fairly often and make a couple dinners out of it. Or I’ll buy a rotisserie chicken and then pair it with some veggies for lunches during the week. I can be a pretty plain eater at times, but it does the trick.

Plain Greek yogurt is a great source of protein and often has probiotics in it which is a plus for gut and immune health.

Celery is a must to get that crunch in this salad but is also great for getting in your vitamins and antioxidants through your food.

Grapes are plain delicious and add such sweetness to the recipe. They also have vitamins and antioxidants.

Avocados are a great source of healthy fats which are necessary for a well rounded diet to help you get lean and fit.

This recipe will take you roughly 15 minutes to make, which is great for your busy schedule.

Avocado Chicken Salad with Greek Yogurt is a flavorful mix of sweet and savory to bring you a highly protein-packed meal.
Ingredients
  • 2 cups shredded chicken – I grab a rotisserie chicken from the store and used it
  • 1 cup plain Greek yogurt
  • 1 tbs olive oil
  • 1 avocado smashed
  • 1/2 cup celery diced
  • 1/2 cup grapes cut in half
  • Season to taste with salt, black pepper, onion and garlic powder
Instructions
  1. In a large bowl, add the chicken, Greek yogurt, olive oil, avocado, celery, grapes and seasonings.
  2. Mix together.
  3. Eat! You can put it on a sandwich, eat it by itself, roll it up in some lettuce wraps.
