Here are 5 quick lunches you can make and take with you this week!
Happy New Year and welcome to 2017! And this is the first meal plan of the year you get the fittest and healthiest. Boy am I excited for 2017.
2016 was fine and all, there was lots of ups and downs, but my biggest up was starting EffiFit! Yup that’s right, my passion is officially 1 years old. And so is this blog (even though I didn’t start writing until later in the year). In 2016, EffiFit was able to help about 100 busy professionals like yourself fit health and fitness back into their lives.
And boy do I feel honored to be part of it. You see what the fitness industry offers currently doesn’t work well with a busy schedule. But I’ve been able to show people how to do it (which is the key) and how to do it without disrupting their everyday lives. And I can’t wait to help so many more in 2017! So with that being said, here’s your meal ideas for this week!

Honey Sesame Chicken Lunch Bowls by Sweet Peas and Saffron
Yes please. For me, I’ll skip the sesame seeds but otherwise this is a great lunch idea. So quick and so simple. And you get a well rounded meal with your protein, veggies, and carbs.
Tuna Quinoa Toss by CookingLight
This is a super quick and delicious lunch idea. Cook your quinoa or brown rice ahead of time to speed up the process. In 10-15 minutes you have lunch ready. Make it the night before or wake up 15 minutes early to make sure you get this one out the door with you.
Lemon Roasted Salmon with Sweet Potatoes and Broccolini by the Little Spice Jar
Your coworkers will be jealous when you roll into the office with this goodness. I’m always a little worried about heating up fish in a public space, so maybe heat the other stuff up and eat the salmon cold. Or hell, just go for it, that’s your choice.
Healthy Sloppy Joes by Slim Sanity
I don’t even know when I last had sloppy joes, but when I saw this I knew I had to try it. Make it with brown rice or quinoa and then your fave veggies. Although green beans seems like a winning combo here.
Harvest Cobb Salad by yours truly
I know salads are played out when it comes to healthy eating, but this one will make you love a good salad again! So many flavors and so much deliciousness all in one bowl. You’re welcome.
