Honey Lime Fruit Salad with Basil

I love summer and BBQ season.

Even though I’m complaining about the unusual amount of days over 100 degrees in Salt Lake. No joke. It was winter one day and then literally 100+ degrees a few weeks later. It’s been crazy. Ryan and I decided to not have the worst landscaping in the neighborhood this year. But our plants are getting scorched from the high heat.

I took this fruit salad with me to a friend and client’s housewarming BBQ/puppy party. You know you’re in good hands when your friends invite your dog to the party too. The lime made this fruit salad surprisingly refreshing and very light. I could have eaten it all night if I had room for it. I ate a lot, but it was mostly veggies and protein.

Make and bring this to the next party or BBQ you attend. The basil is a nice addition and brings it all together well. It also makes for a great dessert. You can eat it on its own or add it to some cottage cheese or Greek yogurt. Feel free to add fruit you like, take out the ones you don’t love, and work around what’s in season. Next time I make this, I plan to add watermelon and mango. Yum!
