Eating breakfast is great to break the fast you’re body is in from sleeping. It can also improve your mental brainpower as you’re taking on the day. I’m a big proponent of eating when you’re hungry. So if you aren’t hungry first thing in the morning, no need to force it. But if you are or you get hungry once you get to work, you now have a quick and healthy breakfast option you can take with you and eat when you get to the office.

This breakfast bowl gives you a solid balanced meal as well as veggies in your breakfast. Yesss! Breakfasts can be a challenge with a busy schedule and often results in either skipping breakfast or grabbing something quick with that latte. But with a little planning the night before or getting up 20 minutes early, you can have a hot and filling breakfast.

With this breakfast bowl, you get so many delicious flavors and goodness while on your fitness journey. Hooray for not have to drink a protein shake every morning. Although that’s a great option if you’re really in a hurry and need something. Protein is your friend!

With this one you’ll get your serving of vegetables from the mushrooms, peppers, tomatoes and greens. When you saute these, it brings out so much flavor. Ryan has zero appreciation for cooked greens so I was nice enough and skipped the greens in his bowl.

The egg yolks (yup I said it) and avocado give you your serving of quality and healthy fats that you need to fill full for longer and as part of a well balanced eating plan. Fat doesn’t make you fat.

The eggs give you your protein which we need for toning, leaning out, and proper hormone functioning.

The brown rice is a great smart carb with lots of fiber which is great for your body and your cholesterol and blood pressure.

Overall a great dish for breakfast and for your goals. Go ahead and make this, double the recipe and have breakfast for the week!

This avocado and egg 20 minute breakfast bowl is flavorful mix of eggs, seasoned vegetables, and avocado to give a protein packed, vegetarian breakfast option.
Ingredients
  • 1 cup cooked rice
  • 4 eggs
  • Half an avocado diced
  • 4 handfuls greens
  • 1 cup diced mushrooms
  • Half a bell pepper chopped
  • 1 tomato chopped
  • 2 tbs olive oil
  • Salt, pepper, onion, and garlic powder to taste
Instructions
  1. In a large skillet heat 1 tbs oil over medium heat.
  2. While oil is heating crack and beat your eggs.
  3. Season with salt, pepper, onion, and garlic powder.
  4. Once oil is warm add the eggs and scramble.
  5. When the eggs are done remove them from heat and add your second tablespoon of oil to the pan.
  6. Add all the veggies and cook until greens are wilted. Season and then remove from heat.
  7. To make bowls:
  8. Start with about a 1/2 cup of rice in the bottom of your bowl.
  9. Top with half the veggie mixture, and half the eggs. Add half of the halved avocado. Eat.
